--- title: Bhuna Khichuri (Bengali Roasted Rice and Lentil Porridge) servings: 4 prep time: 15 minutes cook time: 35 minutes source: https://mycibora.com/recipes/bhuna-khichuri --- Gather @white rice{200%g}, @green pea{100%g}, @cinnamon stick{1}, @green cardamom pod{4} and @ground turmeric{1%tsp}. Dry-roast the @moong dal{150%g} in the empty pot over medium heat, stirring, until it turns a shade darker and smells nutty, about 5 minutes. ~{5%minutes} Tip the roasted dal into a bowl and rinse the rice; set both aside. Stir in the peas for the last 5 minutes. ~{25%minutes} Stir in the @ghee{2%tbsp}, adjust @salt{}, and rest covered 5 minutes before serving, ideally with a fried egg or fish fry on the side. ~{5%minutes}
