--- title: Bigos (Hunter's Stew) servings: 8 prep time: 30 minutes cook time: 150 minutes source: https://mycibora.com/recipes/bigos-hunters-stew --- Gather @white cabbage{400%g}, @smoked sausage{300%g}, @smoked bacon{150%g}, @dried mushroom{30%g}, @prune{100%g}, @onion{2}, @bay leaf{3%leaf}, @allspice berry{5} and @black pepper{}. Soak the dried mushrooms in 300 ml of hot water for 20 minutes; keep the soaking liquid. ~{20%minutes} Render the bacon in a large heavy pot, then brown the @pork shoulder{500%g} in batches and set aside. Soften the onions in the fat, then return the meat with the @sauerkraut{800%g}, fresh cabbage, mushrooms and their strained liquid. Add the prunes, bay leaves, allspice, @tomato paste{2%tbsp} and enough water to barely cover. Cover and simmer very gently for 2 hours, stirring occasionally. ~{2%hours} Stir in the sliced sausage and simmer uncovered for 30 more minutes so the stew thickens. ~{30%minutes} Season with @salt{} and pepper, cool, and if you can bear it, refrigerate overnight and reheat — it will taste noticeably better.
