--- title: Char Siu (Cantonese BBQ Pork) servings: 6 prep time: 15 minutes cook time: 40 minutes source: https://mycibora.com/recipes/char-siu --- Gather @pork shoulder{1%kg}, @hoisin sauce{3%tbsp}, @shaoxing wine{2%tbsp}, @five-spice powder{1%tsp} and @red fermented bean curd{1%tbsp}. Whisk the hoisin, @soy sauce{2%tbsp}, half the @honey{4%tbsp}, wine, five-spice, @garlic{3%clove}, @sugar{2%tbsp} and bean curd into a marinade. Coat the pork strips and refrigerate at least 4 hours, ideally overnight. ~{4%hours} Heat the oven to 200°C. Set the strips on a wire rack over a roasting tray with a little water in the bottom to catch drips. Roast for 15 minutes, then flip the strips and roast 15 minutes more. ~{15%minutes} Warm the remaining honey with a spoonful of the leftover marinade, brush it generously over the pork and roast another 5 minutes. ~{5%minutes} Flip, glaze the other side, and give it a final 5 minutes — the edges should be sticky and charred in spots. ~{5%minutes} Rest 10 minutes before slicing thickly against the grain. Serve over rice with the tray juices, or tuck into steamed buns. ~{10%minutes}
