--- title: Fattoush (Levantine Bread Salad) servings: 4 prep time: 15 minutes cook time: 5 minutes source: https://mycibora.com/recipes/fattoush-syrian --- Gather @cucumber{2}, @tomato{3}, @radish{5}, @spring onion{3} and @fresh mint{0.5%bunch}. Toast or fry the @pita bread{2} until golden and crisp, then break it into rough shards. ~{5%minutes} Chop the cucumbers, tomatoes and radishes into rustic, chunky pieces — fattoush isn't brunoise. Slice the spring onions and roughly chop the mint. Whisk together the @olive oil{4%tbsp}, @lemon{1} juice, @pomegranate molasses{1%tbsp} and @sumac{2%tsp} to make the dressing. In a large bowl, toss the vegetables and herbs with the dressing. Add the bread shards at the last possible second and toss briefly to combine. Serve immediately, while the bread is still crisp.
