--- title: Fèves au Lard (Quebec Maple Baked Beans) servings: 8 prep time: 20 minutes cook time: 210 minutes source: https://mycibora.com/recipes/feves-au-lard --- Gather @white bean{500%g}, @dijon mustard{1%tbsp} and @black pepper{}. Simmer the soaked, drained beans in fresh water 45 minutes until the skins just split; drain, reserving the cooking liquid. ~{45%minutes} Layer the beans, diced @pork belly{200%g}, whole @onion{1} and @bay leaf{1%leaf} in a bean pot or dutch oven. Whisk the @molasses{60%ml}, @maple syrup{80%ml}, mustard and pepper into 500ml of the reserved bean liquid and pour over, just to cover. Cover and bake at 150°C for 3 hours, checking occasionally and topping up with more bean liquid if it looks dry. ~{3%hours} Uncover for the final 30 minutes so the top beans catch a little color and the sauce reduces to a dark, sticky glaze. ~{30%minutes} Remove the onion and bay leaf before serving.
