--- title: Kelewele (Spiced Fried Plantains) servings: 4 prep time: 15 minutes cook time: 15 minutes source: https://mycibora.com/recipes/kelewele --- Gather @ripe plantain{4}, @fresh ginger{30%g}, @cayenne pepper{1%tsp}, @ground anise{0.5%tsp} and @roasted peanut{60%g}. Peel the plantains and cut into bite-size cubes, roughly 2cm. Toss the cubes with the grated ginger, grated @onion{0.5}, cayenne, anise and salt; let them sit 10 minutes so the spices penetrate. ~{10%minutes} Heat the @sunflower oil{400%ml} in a deep skillet to 170°C — a cube of plantain should sizzle immediately on contact. Fry in batches, without crowding the pan, until the edges caramelize dark, about 5 minutes per batch. ~{5%minutes} Lift out with a slotted spoon and drain on paper towel; repeat with the remaining batches. Shower the hot kelewele with roasted peanuts and serve right away. Eat standing, ideally at night.
