--- title: Khinkali (Georgian Soup Dumplings) servings: 4 prep time: 60 minutes cook time: 20 minutes source: https://mycibora.com/recipes/khinkali --- Gather @all-purpose flour{500%g}, @ground beef{300%g}, @ground pork{200%g}, @fresh cilantro{3%tbsp}, @ground caraway{0.5%tsp} and @red pepper flakes{0.5%tsp}. Knead the flour, cold @water{250%ml} and a teaspoon of @salt{1.5%tsp} into a firm, smooth dough. Rest, covered, 30 minutes. ~{30%minutes} Mix both meats with the @onion{2}, cilantro, caraway, pepper flakes, salt and @black pepper{1%tsp}. Work 150 ml of cold water into the filling a spoonful at a time until it is loose and almost sloppy — that water becomes the broth. Roll the dough thin and cut 12 cm circles. Roll each circle's edge even thinner, leaving the center slightly thicker. Put a heaped spoonful of filling in the center and pleat the edge around it — aim for 15 to 20 small folds — then twist the top shut into a knot. Boil in well-salted water, stirring gently once so they don't stick. When they float, cook 8 more minutes. ~{8%minutes} Lift out carefully, dust with black pepper, and serve at once. Hold by the knot, bite, slurp, then eat.
