--- title: Pad Krapow Gai (Holy Basil Chicken) servings: 2 prep time: 10 minutes cook time: 10 minutes source: https://mycibora.com/recipes/pad-krapow-gai --- Gather @ground chicken{400%g}, @holy basil{2%bunch}, @bird's eye chili{4}, @jasmine rice{300%g} and @vegetable oil{4%tbsp}. Pound or roughly chop the @garlic{4%clove} and chilies together — chunky, not paste. Fry the eggs one at a time in 2 tablespoons of very hot oil, spooning oil over them until the edges are lacy and crisp but the yolks still run. Set aside. ~{2%minutes} In the remaining oil over the highest heat, fry the garlic and chilies for 20 seconds, then add the chicken, pressing and breaking it up. When the chicken loses its pink, add @oyster sauce{1%tbsp}, @fish sauce{1%tbsp}, @soy sauce{1%tsp} and @sugar{1%tsp} and toss 2 minutes until glossy. ~{2%minutes} Kill the heat, throw in the basil and stir just until it wilts into the meat. Serve over rice with a crispy @egg{2} on top of each plate.
