--- title: Sernik (Polish Cheesecake) servings: 10 prep time: 25 minutes cook time: 60 minutes source: https://mycibora.com/recipes/polish-sernik --- Gather @farmer's cheese{1%kg}, @vanilla extract{2%tsp} and @raisin{80%g}. Beat the @butter{100%g} with the @sugar{180%g} until fluffy, then beat in the yolks one by one, followed by the cheese, vanilla and @potato starch{3%tbsp}. Whip the @egg{5} whites with a pinch of @salt{} to soft peaks. Fold the whites into the cheese mixture in three additions, keeping as much air as you can, then fold in the raisins. Pour into a lined 24 cm springform pan and smooth the top. Bake at 170°C for 55–60 minutes until just set with a slight wobble at the center. ~{58%minutes} Turn off the oven, crack the door and let the cake cool inside for 30 minutes to prevent collapse. ~{30%minutes} Chill completely before slicing — sernik is best the next day.
