--- title: Som Tam (Green Papaya Salad) servings: 2 prep time: 15 minutes source: https://mycibora.com/recipes/som-tam --- Gather @green papaya{300%g}, @cherry tomato{100%g}, @green bean{80%g}, @peanut{40%g} and @bird's eye chili{3}. Pound the @garlic{2%clove} and chilies in the mortar to a rough paste. Add the @palm sugar{1.5%tbsp}, @fish sauce{2%tbsp} and the juice of both limes and muddle until the sugar dissolves; toss in the squeezed @lime{2} halves for their oils. Add the green beans and @dried shrimp{1%tbsp} and bruise them with a few firm strokes. Add the papaya and tomatoes and work with a light pound-and-toss motion — the pestle bruises while a spoon lifts from below. Taste and correct: it should hit sour and hot up front with sweetness trailing. Pile onto a plate, top with peanuts and serve immediately, ideally with sticky rice.
