--- title: Suya (Spiced Grilled Beef Skewers) servings: 4 prep time: 25 minutes cook time: 10 minutes source: https://mycibora.com/recipes/suya --- Gather @beef sirloin{600%g}, @roasted peanut{100%g}, @cayenne pepper{2%tsp}, @ground ginger{2%tsp}, @bouillon cube{1} and @vegetable oil{3%tbsp}. Grind the peanuts to a dry, sandy powder — stop before they turn to butter — then sift and mix with the @paprika{1%tbsp}, cayenne, ginger, @garlic powder{1%tsp}, @@onion{1} powder{1%tsp}, bouillon and a pinch of @salt{} to make yaji. Toss the beef ribbons with the oil, then with two-thirds of the yaji, pressing it on so every slice is coated. Let the meat absorb the spice for at least 30 minutes, or up to overnight in the fridge. ~{30%minutes} Thread the ribbons onto skewers in loose waves and grill over high heat, 3–4 minutes per side, until charred at the edges but still juicy. ~{7%minutes} Dust the hot skewers with the reserved yaji straight off the grill. Serve wrapped in the traditional way: with raw onion rings, @tomato{2} and extra spice on the side.
