--- title: Töltött Paprika (Hungarian Stuffed Peppers) servings: 4 prep time: 30 minutes cook time: 60 minutes source: https://mycibora.com/recipes/toltott-paprika --- Gather @bell pepper{8}, @white rice{100%g}, @sweet paprika{1%tbsp}, @canned tomato{2%can} and @fresh parsley{0.5%bunch}. Mix the @ground pork{500%g}, rice, @onion{1}, @garlic{2%clove}, paprika, @egg{1}, salt and pepper into a loose but cohesive filling. Pack the mixture into the peppers, leaving a little headroom for the rice to swell, and cap with the reserved tops. Stand the peppers upright in a pot just wide enough to hold them; pour the crushed tomato and enough water around to reach two-thirds up the peppers. Add the @sugar{1%tsp} and a pinch of salt to the sauce, cover, and simmer gently until the peppers are tender and the rice is cooked through, about 50 minutes. ~{50%minutes} Baste the peppers with sauce once or twice as they cook. Rest 5 minutes, scatter with parsley, and serve with the sauce ladled over and bread alongside.
