Butter one side of every slice of bread all the way to the edges.
💡 Butter the bread, not the pan — you get even browning corner to corner.
Lay two slices butter-side down in a cold frying pan and top each with two slices of cheddar and the second slice of bread, butter-side up.
Set the pan over medium-low heat and cook 4–5 minutes until the underside is deep golden.
💡 Starting cold and going low gives the cheese time to melt before the bread burns.
Flip carefully and cook 3–4 minutes more, pressing gently with the spatula.
Rest 1 minute, slice diagonally and serve — with tomato soup if you're doing it properly.
Cheap sliced bread and processed cheese met during the Depression, and the grilled cheese sandwich has been America's comfort lunch ever since — canonically paired with a bowl of tomato soup for dunking. Diners, school cafeterias and late-night stoves all claim it.
