Trim the white core from the lime quarters and drop four pieces into each tumbler with 2 teaspoons of sugar.
💡 The core is where the bitterness lives — thirty seconds of trimming saves the drink.
Muddle firmly, pressing the limes just enough to release juice and oils from the skin.
💡 Press, don't pulverize — grinding the peel turns the drink bitter.
Stir until the sugar dissolves into the lime juice.
Pack each glass to the top with ice and pour 60 ml of cachaça over.
Stir well from the bottom up, garnish with a lime wheel and serve with a short straw.
The caipirinha grew out of a lime-garlic-honey remedy from São Paulo's countryside in the early 1900s; the garlic left, the cachaça stayed. Made from the sugarcane spirit Brazil has distilled since the 1500s, it is now protected by law: no lime, sugar and cachaça, no caipirinha.
