Grate the cucumber, sprinkle with a pinch of salt, and let it sit 10 minutes, then squeeze out as much liquid as you can.
๐ก Skipping the squeeze leaves you with thin, watery raita by the time it hits the table.
Dry-roast the cumin seeds in a small pan over medium heat until fragrant and a shade darker, about 1 minute, then crush coarsely.
Whisk the yogurt smooth in a bowl, then fold in the squeezed cucumber, mint and green chili.
Season with the salt and half the roasted cumin.
Chill at least 15 minutes, then scatter the remaining roasted cumin on top before serving.
Raita accompanies nearly every Indian meal that includes a curry with real heat, its job being purely to cool the palate between bites rather than to stand out on its own. Cucumber is the most common base because it releases moisture readily and needs no cooking, making raita one of the few dishes on an Indian table that requires no stove at all. Regional versions swap in boondi, onion or pineapple, but yogurt and cucumber remain the everyday default.
