Crackle the cumin seeds in the oil, then cook the onion until deeply golden, about 8 minutes.
Add garlic, ginger and green chili, cook 1 minute, then stir in the turmeric, chili powder and coriander.
Add the tomato and cook it down until jammy and the oil separates at the edges, about 6 minutes.

Uncover and simmer 3 minutes more to your preferred gravy thickness.
Stir in the garam masala, rest 3 minutes off the heat, and finish with cilantro before serving with rice or roti.
