Put the coffee, sugar and 3 tablespoons of the cold water into a shaker or jar with a lid.
Shake hard for 30 seconds until a thick, pale foam forms.
💡 Only spray-dried instant coffee foams properly — this is one drink where fancy beans lose.
Pour the foam into a tall glass over the ice cubes.
Top up slowly with the remaining cold water, and milk if you like it sketo, metrio or me gala.
💡 Pour down the side of the glass so the foam cap stays intact.
Serve with a straw and no hurry whatsoever.
The frappé was born by accident at a Thessaloniki trade fair in 1957, when a Nescafé employee with no hot water shook his coffee with cold water instead. The foamy result conquered the country; a frappé nursed for two hours at a seaside café is practically a Greek civic right.
