Sizzle the pork belly in sesame oil in a heavy pot over medium heat until its fat renders and the edges brown, about 5 minutes.
Add the kimchi and stir-fry another 5 minutes until it softens and smells caramelized.

Stir in the gochujang, gochugaru, garlic and onion, then pour in the water and any reserved kimchi juice.

Simmer, partly covered, for 15 minutes so the flavors knit together.
Slide in the tofu slabs and simmer 5 minutes more without stirring hard, so they stay whole.

Kimchi jjigae is what happens to kimchi that has fermented past its crisp prime: too sour to eat raw, perfect for the pot. It became a staple as home refrigeration made year-round kimchi possible, and Koreans will tell you the stew is only as good as the age of the kimchi that goes in. It arrives at the table still boiling in its stone pot.
