Marinate chicken and ALL the onions in lemon juice, mustard, garlic and oil at least 4 hours.
Shake off the chicken and grill or sear it until charred at the edges.
Cook the drained onions low and slow in the pot 25 minutes until silky and sweet.

Return chicken with the marinade, olives and whole pepper; simmer 20 minutes.
Serve over broken rice, onions covering everything.
Yassa comes from the Casamance region, and its logic is beautiful: marinate chicken in lemon and onions, grill it, then cook the marinade into a sweet-sour onion gravy. It is many diaspora cooks' first Senegalese dish, and nobody stops at one serving.
