Toss the sliced cucumber with the salt in a colander set over a bowl and let it sit until visibly weeping, about 15 minutes.
π‘ Press down on the cucumber a few times as it sits β you're pushing the water out, not just waiting for it.
Squeeze the slices firmly by the handful to force out the remaining liquid, then pat dry.
Whisk the vinegar and sugar together until the sugar dissolves.
Toss the pressed cucumber in the vinegar brine with the dill and black pepper.
Chill at least 10 minutes before serving so the flavors settle.
Pressgurka takes its name from the pressing step: salting the cucumber draws out water so the slices stay crisp instead of turning limp in their own juice. It appears on nearly every Swedish home dinner table as the default quick pickle, ready in under half an hour and requiring no canning equipment at all.
