Season the chicken with chili powder, cumin and salt. Heat half the oil in a skillet over medium-high and cook the chicken, stirring occasionally, until browned and cooked through, about 7 minutes.
Remove the chicken and add the bell pepper and onion to the same pan; cook until softened and lightly charred, about 5 minutes.
Return the chicken to the pan and toss with the peppers off the heat.
Lay a tortilla flat, scatter cheese over one half, add a quarter of the chicken mixture, more cheese on top, and fold the tortilla over.
💡 Cheese on both sides of the filling glues the quesadilla shut as it melts.
Wipe out the skillet, add a little oil, and cook each folded quesadilla over medium heat until golden and crisp, about 3 minutes per side.
Cut each into wedges and serve hot with sour cream and lime.
