Simmer the lentils in plenty of water until tender but still holding their shape, about 18 minutes; drain well.
π‘ Start checking at 15 minutes β this salad wants bite, not mush.
While the lentils cook, whisk the garlic, cumin, lemon juice, olive oil, salt and pepper into a dressing.
Toss the drained lentils with half the dressing while they're still warm, so they soak it up.
Fold in the diced tomato, spring onion and most of the parsley.
Add the remaining dressing, toss again, and adjust with more lemon or salt to taste.
Scatter with the remaining parsley and serve warm or at room temperature, with pita bread for scooping.
This lentil salad is a fixture of Lebanese vegetarian tables, served at room temperature alongside grilled meats or eaten alone with warm pita. Dressing the lentils while they're still hot is standard technique across Levantine cooking β a warm ingredient absorbs a vinaigrette far better than a cold one.
