Dissolve the yeast and sugar in the water, then knead with the flour, salt and oil into a smooth dough. Rise 1 hour until doubled.
Divide into 12 pieces and roll each into a 40 cm rope.
Twist ropes together in pairs, then join the ends to form 6 twisted rings.
💡 Seal the join by rolling it under your palm — loose ends unravel in the oven.
Dip each ring in the diluted grape molasses, then press both sides into the toasted sesame seeds.
💡 Toasting the sesame first is non-negotiable — it is half the flavor of a simit.
Rest the rings 20 minutes on the baking sheet.
Bake at 220°C for 15–18 minutes until deep mahogany. Cool briefly and eat warm, torn, with tea.
Simit has been sold on Istanbul streets since Ottoman times, stacked in rings on the heads of vendors whose cry still opens the city's mornings. The molasses dip before the sesame coat is the old bakers' secret behind its color and faint sweetness.
