Rinse the lentils in a sieve under cold water until it runs clear.
Heat the oil in a large pot over medium heat and cook the onion and carrot until softened, about 5 minutes.
Stir in the garlic and paprika and cook 30 seconds, until fragrant.
Add the lentils, canned tomato, vegetable stock and bay leaf; bring to a boil.
Reduce to a simmer and cook, stirring occasionally, until the lentils have fully broken down and the soup thickens, about 20 minutes.
π‘ Red lentils cook down completely β that's what gives this soup its body, no blender needed.
Season with salt and pepper and discard the bay leaf.
Ladle into bowls with a drizzle of olive oil and a scatter of dill.
Pea and bean soups have a long history in Ukrainian kitchens, especially during Lenten fasting when meat is off the table, but split peas demand hours of soaking most weeknights don't allow. Red lentils cook down to the same thick, golden texture in twenty minutes with no soaking at all, and have become the pantry staple many Ukrainian home cooks now reach for instead.
