Wash the beef with lime, season with garlic, and simmer until nearly tender, 45 minutes.
Boil the squash separately until soft and blend it into a smooth base.
Combine beef, squash purée, potato, carrot, cabbage and the whole pepper; simmer 25 minutes.
Add vermicelli for the last 8 minutes.
Pull the pepper, season, and serve with bread — traditionally on January 1st, honorably any day.

Under French rule, enslaved Haitians grew squash soup they were forbidden to eat. On January 1, 1804 — independence day — they ate it. Soup joumou is UNESCO-listed heritage now, and every New Year the pots go on before dawn.
