Boil the soaked saltfish 10 minutes, drain, and flake it, discarding skin and bones.
Sweat onion, tomato and scotch bonnet in oil until soft.
Fold in the flaked fish and warm through.
Add the ackee last and turn it gently once or twice β it breaks like soft scrambled egg if you stir.

Finish with black pepper and serve with fried dumplings or boiled green banana.
Ackee came from West Africa on slave ships and salted cod from the North Atlantic trade; together they became the national breakfast. Half of the internet still thinks it is scrambled eggs, which is exactly why the other half keeps posting it.
