Dry-roast the moong dal in the empty pot over medium heat, stirring, until it turns a shade darker and smells nutty, about 5 minutes.
π‘ This roast β the 'bhuna' in bhuna khichuri β is what gives the dish its backbone. Don't rush past it.
Tip the roasted dal into a bowl and rinse the rice; set both aside.
Heat the mustard oil in the same pot until it stops smoking, then crackle the bay leaf, cinnamon, cardamom and cumin seed.
Add the onion, garlic, ginger and green chili; soften for 3 minutes, then stir in the turmeric and potato.
Add the roasted dal and rice, stirring for 2 minutes so every grain is coated in spiced oil.
Pour in 900 ml hot water, bring to a boil, then simmer uncovered, stirring occasionally, until rice and dal collapse into a soft, loose porridge, 20β25 minutes. Stir in the peas for the last 5 minutes.
π‘ Add more hot water if it thickens too fast β khichuri should fall off a spoon, not sit in a mound.
Stir in the ghee, adjust salt, and rest covered 5 minutes before serving, ideally with a fried egg or fish fry on the side.
Khichuri is Bangladesh's rainy-season instinct: when the monsoon closes markets and roads, rice and lentil go into one pot with whatever vegetable is on hand. Dhaka offices informally slow down on the heaviest rain days, when khichuri and a fried egg become the expected lunch. Roasting the lentils first β the 'bhuna' step β is what separates a home cook's khichuri from a bland boil.
