Season the beef strips with salt and pepper and set aside.
Heat 1 tbsp of the oil in a large skillet over medium heat. Add the onions with a pinch of salt and cook, stirring occasionally, until deeply soft and golden, about 12 minutes.
π‘ This is the step that makes the dish β real acebolado onions need low heat and patience, not a rushed high-heat fry.
Scrape the onions onto a plate. Wipe out the pan, add the remaining oil, and raise the heat to high.
Sear the beef strips in batches, 60β90 seconds total per batch, until browned outside but still faintly pink in the center.
π‘ Thin strips overcook in seconds β sear in small batches so the pan stays screaming hot.
Return the onions and garlic to the pan with the beef, splash in the vinegar, and toss 1 minute to combine and pick up the browned bits.
Season to taste and scatter with parsley.
Serve immediately over rice with beans, while the beef is still hot and juicy.
Bife acebolado β 'steak with onions' β is the standard beef course of the prato feito, the fixed lunch plate of rice, beans, salad and a quick protein sold in corner restaurants across Brazil. The whole dish turns on contrast: onions cooked down low and patient, beef given barely a minute of high heat so it stays tender.
