Pile in the chopped callaloo with a splash of water, cover, and steam 8–10 minutes.

Callaloo means different plants around the Caribbean; in Jamaica it is amaranth, cooked soft with aromatics. It shares the breakfast table with ackee and boiled food, and stands in for saltfish's partner on meatless days.
