Toss the potato wedges in a roasting pan with the oil, lemon juice, garlic, oregano, salt and pepper.
Pour in the stock — it should come a third of the way up the potatoes.
💡 The liquid is the trick: the potatoes braise soft before they roast crisp.
Roast at 200°C for 40 minutes without touching them.
Turn the wedges, then roast another 20 minutes until the liquid is gone and the edges are golden.
