Melt the butter in a large pot over medium heat and brown the sliced sausage, about 3 minutes; lift out and set aside.
Add the onion to the fat left behind and cook until soft, about 4 minutes.
Stir in the cabbage in batches, letting each addition wilt down before adding more, then add the garlic, caraway and bay leaf.
Pour in the stock and vinegar, cover, and simmer gently, stirring occasionally, until the cabbage is fully tender, about 20 minutes.
💡 Low and slow is what turns cabbage sweet instead of sulphurous — resist rushing it.
Return the sausage to the pot and simmer uncovered 5 more minutes to warm through and thicken slightly.
Season with salt and pepper, discard the bay leaf, and serve hot.
