Melt the butter in a large pot and soften the onion, about 5 minutes.
Add the potato, broccoli and garlic, pour in the stock, and bring to a boil.
Reduce to a simmer and cook until the potato and broccoli are fully soft, about 15 minutes.
Meanwhile, toast the cubed bread in a dry pan over medium heat, stirring, until golden croutons form, about 4 minutes.
Blend the soup smooth with an immersion blender, then stir in the milk and warm through gently without boiling.
💡 Boiling after the milk goes in can turn the soup grainy — keep it just below a simmer.
Season with salt and pepper and serve topped with the croutons.
