Season the chicken with salt and pepper. Heat the oil in a large skillet over medium-high heat and brown the pieces on all sides, about 6 minutes.
Lower the heat, add the butter and onion, and cook until softened, about 5 minutes.
Stir in the garlic and cook 30 seconds, then pour in the stock, scraping up the browned bits.
Cover and simmer gently until the chicken is cooked through and tender, about 15 minutes.
Off the heat, stir in the sour cream and most of the dill until the sauce is smooth and creamy.
π‘ Take the pan off the heat before the sour cream goes in, or the sauce can split.
Warm gently over low heat for 2 minutes without boiling, then scatter with the remaining dill and serve.
