Put the kombu and water in a saucepan and bring slowly toward a boil over medium-low heat, about 8 minutes.
Pull out the kombu just before the water boils β boiled kombu turns the dashi bitter and slimy.
π‘ Slow heating is the whole technique; the kombu gives up its savor gradually.
Add the wakame and tofu cubes and simmer very gently for 2 minutes.
Take the pan off the boil, then dissolve the miso through a small sieve or against the back of a ladle.
π‘ Never boil miso once it is in β high heat kills its aroma and its living cultures.
Ladle into bowls, top with scallions, and serve immediately alongside rice.
Miso soup has been the constant of the Japanese table since the samurai era, when a bowl of it with rice and pickles defined a proper meal. Every region leans on its own miso β sweet and pale in Kyoto, dark and robust in the north β and every household seems to have its own daily combination of additions.
