Crackle the cumin seeds in the oil, then cook the onion until golden, about 7 minutes.
Add garlic, ginger and green chili, cook 1 minute, then stir in the turmeric and coriander.
Add the canned tomato and cook down until thick and the oil separates at the edges, about 7 minutes.
Add the mushrooms and cook, stirring, until they release their liquid and it mostly cooks away, about 6 minutes.
๐ก Let the mushroom liquid cook off completely โ that's what keeps the masala thick instead of watery.
Stir in the peas and 100 ml water, cover and simmer 5 minutes.
Season with salt, stir in the garam masala, and finish with cilantro.
Mushroom curries are a newer addition to Indian home cooking, gaining ground as button mushrooms became widely available in supermarkets from the 1980s onward, with cooks adapting the same onion-tomato masala already used for chicken and paneer. Paired with peas โ a freezer staple in most Indian kitchens โ it became a popular vegetarian option on nights when the household skips meat, especially in North Indian homes looking for a change from paneer.
