Placki z Cukinii (Polish Zucchini Pancakes)

Method

1. 1

Grate the zucchini, toss with the salt, and let it sit 10 minutes, then squeeze out as much liquid as possible in a clean towel.

💡 Skip this and the batter turns to soup in the pan — squeeze harder than feels necessary.

2. 2

Mix the squeezed zucchini with the egg, flour, cheddar, garlic, dill and pepper into a thick, scoopable batter.

3. 3

Heat a generous layer of oil in a frying pan over medium heat.

4. 4

Fry spoonfuls flattened thin, about 3 minutes per side, until golden and crisp at the edges.

5. 5

Drain briefly on paper towels between batches.

6. 6

Serve warm with a dollop of sour cream.
