Placki Ziemniaczane (Polish Potato Pancakes)

Method

1. 1

Grate the potatoes finely with the onion, then tip into a sieve and press out as much liquid as you can.

💡 Let the squeezed liquid settle and scrape the potato starch off the bottom back into the batter — free binder.

2. 2

Mix in the egg, flour, salt and pepper to make a thick, drop-able batter.

3. 3

Heat a generous layer of oil in a wide pan over medium-high heat.

4. 4

Fry spoonfuls pressed thin, about 3 minutes per side, until the edges are lacy and deep gold.

5. 5

Drain on paper towels and serve hot with sour cream — or, for the sweet camp, a dusting of sugar.
