Toss the pork cubes with 2 tbsp oil, half the lemon juice, half the garlic, half the oregano, salt and pepper. Marinate at least 1 hour.
π‘ An overnight marinade makes the pork noticeably more tender if you can plan that far ahead.
Toss the potato wedges with the remaining oil, oregano, salt and pepper on a sheet pan.
Roast the potatoes at 220Β°C until golden and tender, turning once halfway, about 30 minutes.
Meanwhile stir the yogurt with the grated cucumber, remaining garlic and a pinch of salt into a quick tzatziki.
Thread the pork onto skewers and grill or pan-sear over high heat, turning, until charred outside and just cooked through, 10β12 minutes.
Plate the potatoes, slide the pork off the skewers alongside, and add the tomato wedges, onion and a spoon of tzatziki.
Finish with the remaining lemon juice and lemon wedges on the side.
In Greek taverna slang, ordering souvlaki 'me pita' gets the wrap; ordering it 'merida' β the plate β gets the same charred meat served sitting down with potatoes, salad and bread on the side. Home cooks build the same plate on weeknights, trading the deep fryer for a sheet pan of oven potatoes.
