Whisk the soy sauce, honey, cornstarch and 3 tbsp water together in a small bowl to make the sauce.
Heat half the oil in a wok or large skillet over high heat and sear the shrimp 1β2 minutes per side until just pink. Remove to a plate.
Add the remaining oil, then the broccoli, bell pepper and carrot, and stir-fry 4 minutes until crisp-tender.
